Frying jols is traditional in villages around the Mediterranean, we often go to buy it at the fishing port of Grau-du-Roi, for example.
It is a dish appetizer that you will often find because these small crispy and salty fish are easy to nibble even if the appetite is a little cut off by the strong heat of the south.
In the 80s, the halles de Gallargues-le-Montueux hosted a weekly market throughout the year. There was a fishmonger's with a fairly wide choice, as I recall, and a nice, clearly audible fishmonger who animated the market!
